Attilio is a young entrepreneur who took over the family’s butcher shop Macellaria Fornelli from his father. Located in the small village Montemilone, most of the younger generation emigrated away for lack of opportunities.
Attilio decided to stay and make his dreams come true. He specialises in the traditional “Lucanica” sausage. This is a “Basilicata” speciality and the recipe’s roots trace back to the Roman empire, 200 BC.

This tasty cured meat is ideal for pasta dishes and also as an Antipasti.
Remove the bottom part of the Pancetta, this is kept to add more flavour during curing but too hard for eating.
Slice and enjoy with bread, cheese and red wine during your Aperitifs.
If you want to add it to your pasta, slowly warm up olive oil in a pan, add some onion pieces and then add sliced pieces of Pancetta. Once it’s cooked, add the tomatoes or tomato sauce.
