What makes this producer even more unique is the exclusive sourcing of ingredients from Basilicata and the usage of historical recipes from the city of Matera. Matera has been famous for the production of very high quality durum wheat since the 14th century.

The name Orecchiette means small ear in Italian, which is what this pasta looks like.
Typically Orecchiette are served with meat, capers and white wine. But they go equally well with any tomato based sauce (called al sugo), which is part of the typical Sunday lunch in Southern Italy.
