To make things even better, Alica source the flour only from selected regions in Southern Italy. This also adds traceability to the whole production chain.

And while we are at it, let’s tell you another secret. Modern (and industrial) pasta “shaping” processes use teflon materials to bring the pasta dough into form. Alica, on the other hand, rely on a traditional cold “bronze-drawn” process. The result is pasta with a wrinkled surface that captures sauces and seasonings much better than any industrial counterpart. And in turn, everything ends up much tastier. You will agree once you try!
